This Non Alcoholic Peach Drink is the perfect way to toast late summer’s sweetness.

Ingredients
1 cup ripe peach chunks (fresh or frozen, thawed)
1 tablespoon honey or agave syrup (adjust to taste)
1 tablespoon fresh lemon juice
4 to 5 fresh basil leaves, plus extra for garnish
1 cup chilled soda water (or sparkling mineral water)

Instructions:
Make the peach puree: Blend the peach chunks, honey (or agave), and lemon juice in a blender until smooth.
Muddle the basil: In two tall glasses, lightly muddle 2 to 3 basil leaves each to release their aroma.
